This Mocha Mamon recipe is a must try. It yields a very soft, fluffy and pillow-y bread which is what I remembered eating when I was in the Philippines. You don’t have to look farther. THIS. IS.IT. An easy Mocha Mamon Recipe you can add in you recipe list.

When you look at the pictures, you would think that making Mocha Mamon is not an easy feat to do; but I now I can assure you that making this Mamon is just as easy a 1,2, 3.I got this recipe from the blog Ifoodlafoodiesand I am so happy that the recipe was a success the first try. The taste is amazing. You can actually taste the mocha flavor which I love, because eating this mamon just wakes me up and perks me just like any coffee will do. The taste of the bread have a hint of bitterness from the coffee granules.

SO HOW DO YOU MAKE MOCHA MAMON?

  • First, you really need to prepare your ingredients, so that once you start, you will not be scampering around looking for the next ingredient.
  • Use cake flour when you make Mamon. Cake flour can make your bread really fluffy and soft compared to using all purpose flour.
  • You don’t have to sift the ingredients.
  • You should research how a stiff peak should look like. There are so many videos in YT to assist you.
  • I did not dissolve the coffee powder so that the you can taste coffee granules in each bite.
  • You can use a smaller cupcake pan with this, but I prefer to use those mini non stick tart pan,since I like the look of the finish product. It looks similar to Goldilocks,in which the Mamon is flat and a bit wider compared to cupcake look, which to me is a blah. I promise, the batter do not leak underneath.   • Don’t spray tart pan with non stick spray. I promise the dough/bread do not stick on the pan. You can easy remove the Mamon after cooling it down.

MOCHA MAMON INGREDIENTS ?

Mocha Mamon consist of ingredients which you can probably find in your pantry already, or you can easily find them in the baking section in your grocery stores.

  • Cake flour
  • Eggs separated
  • sugar
  • baking powder
  • vanilla
  • water
  • Cream of Tartar
  • salt

Make this very soft, fluffy and delicious Filipino Mamon. Instructions are easy to follow and recipe has been tried over and over for a no fail Mamon you can make.

Ingredients

  • 1 cup plus 2 tablespoons cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 tablespoons coffee powder I used Nescafe' classic
  • 4 egg yolks
  • 1/2 teaspoon vanilla
  • 1/2 cup vegetable or canola oil
  • 1/2 cup water
  • MERINGUE
  • 4 egg whites
  • 1 teaspoon cream of tartar
  • 1/4 cup sugar

Instructions

  • DON'T GREASE PAN

  • Pre heat oven at 350 F

  • Combine all of the dry ingredients and make well at the center. Add the wet ingredients, and mix gently until there is no lumps. ( some coffee granules are hard to break, so it ok if they are not completely dissolve). Using your spatula, mix until smooth.

  • In a separate non grease bowl, mix the egg whites and the cream of tartar until bubbly. Add a third of the sugar and mix. Gradually add sugar, and beat until stiff peaks form.

  • Fold meringue into the egg mixture make into 3 parts and transfer batter into a tart pan and bake in a pre heated oven until toothpick comes out clean, or mamon bounce back to when poke. Usually, this only take 20 minutes. Let cool and remove from the pan. Serve and enjoy!

Notes

REMOVE MAMON FROM THE PAN WHILE STILL HOT. BE VERY GENTLE.
You can add all of the coffee powder with the dry ingredients, or, add half to the water and mix and the other half add to the dry ingredients. Whatever you choose, it yeilds the same mocha taste, but I prefer mixing half of the coffee with the water.
