Method

  1. TO MAKE THE HASSELBACK POTATOES Preheat the oven to 180°C/350°F/gas 4.
  2. Try to choose small potatoes, give them a wash, and if you have any larger ones, cut them in half and use the flat side as a base. To make this process as simple as possible, place a potato on a board between the handles of two wooden spoons, so that when you slice down into the potato the spoons stop the blade from going all the way through. Carefully slice at just under ½cm intervals all the way along. Repeat with all the potatoes, placing them in a large roasting tray as you go.
  3. Drizzle with 2 tablespoons of olive oil, season with sea salt and black pepper, and roast for 1 hour, or until the potatoes are golden and tender. Remove and leave to cool.
  4. TO MAKE THE PIGS IN BLANKETS Twist each sausage in the middle so you can cut each one in half.
  5. Now, for a bit of fun, I like to use a small sharp knife to make an incision into each one, creating a little hole ready to stuff with whatever will elevate your sausages to an even higher level of joy.
  6. Cut the bacon rashers in half, then, working one at a time, press the side of your knife across each mini rasher to stretch it out. Place a sausage on each, wrap it up, then skewer with a co*cktail stick or a sharpened sprig of rosemary.
  7. Nestle the wrapped sausages in among the cool potatoes, then cover and refrigerate overnight.
  8. TO SERVE Preheat the oven to 190°C/375°F/gas 5.
  9. Peel the garlic and pound up in a pestle and mortar with a small pinch of salt, then mix in the polenta and finely grate in the walnuts. Sprinkle over the potatoes, then drizzle with 1 tablespoon of oil.
  10. When the Epic mixed roast comes out, roast the potatoes for 1 hour, or until hot and crisp, and the sausages are golden and cooked through.

Tips

VEGGIE LOVE
Swap the pigs in blankets for halved veggie sausages. Add for just 20 minutes, grating over melty cheese for the last 5 minutes.

FAQs

How does Gordon Ramsay make perfect roast potatoes? ›

In a video online, Gordon explained: “For crispy roast potatoes, you can depend on them, my tip is to parboil them, leave them to steam dry, then sprinkle them with semolina or flour, and then give them a good roughing up.”

How to make Jamie Oliver's Essex Hasselback potatoes? ›

Carefully slice at just under ½cm intervals all the way along. Repeat with all the potatoes, placing them in a large roasting tray as you go. Drizzle with 2 tablespoons of olive oil, season with sea salt and black pepper, and roast for 1 hour, or until the potatoes are golden and tender. Remove and leave to cool.

Why do you soak potatoes before roasting? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

How does Ina Garten make baked potatoes? ›

Garten doesn't wrap her baked potatoes in aluminum foil.

Instead of wrapping the potato in foil, Garten just covers a baking sheet with it. I followed suit, placing my seasoned potato on a foil-covered tray. Once the oven was preheated to 400 degrees Fahrenheit, I baked the potato for one hour.

Should you boil potatoes first before roasting? ›

Do I have to boil potatoes before roasting? Not necessary but this can help get the perfect consistency and crispiness. Make sure you boil them but leave them a bit al dente and they will crisp up perfectly in the oven.

What happens if you don't soak potatoes? ›

A: First let's talk about why cut potatoes need to be immersed in water to begin with. The reason is to prevent the potatoes exposure to air, which causes dehydration, oxidation, and discoloration. Immersing cut potatoes will also help rinse off excess starch.

Should you put salt in water when soaking potatoes? ›

Covering in water helps the potato from turning a dark color. Adding salt to the water to form a brine mixture may seem helpful and can impart a flavor to the potato strips, however, salt is a major contributor to the fry oil breaking down prematurely, so I don't recommend it.

Why don't my roast potatoes go crispy? ›

For the best result, you want to choose a starchy potato like Russets that will get a crunchy, crispy outside and fluffy, creamy inside when roasted. Other potatoes like Yukon Gold or red potatoes tend to have a softer skin when cooked, which might not crisp up the way you intend.

How to make Paula Deen's baked potatoes? ›

Rub the skin with vegetable oil. Sprinkle with salt. Pierce the skin of the potato in several places with the tines of a fork. Place on a cookie sheet and bake for 1 hour and 15 minutes, until the sides are soft when pressed.

How do you bake potatoes Jamie Oliver? ›

Wash your potatoes and parboil until almost tender, then drain. Pick and bash the rosemary leaves. Drizzle with just a little touch of oil and roll in a teaspoon of sea salt, a little freshly ground black pepper and the rosemary. Put the potatoes in a roasting tray and cook in the oven for 25 minutes until golden.

Why do restaurants bake potatoes in foil? ›

Some say wrapping baked potatoes in aluminum foil helps them cook faster (aluminum conducts heat, then traps it), and it does keep them hot for longer once they come out of the oven, which is why we think restaurants use this method. Wrapping potatoes will also give you a softer, steamed skin, if that's what you like.

How do restaurants prepare roast potatoes? ›

  1. Many restaurants pre-cook their potatoes partially. This could be by baking, microwaving, or even boiling them until they're almost done.
  2. When you order, they finish them off in a hot oven to get a crispy skin and ensure they're piping hot throughout.

What oil does Gordon Ramsay use for roast potatoes? ›

Gordon Ramsay's roast potato recipe

For Gordon's roast potato recipe you'll need: 1.2kg floury potatoes, such as Maris Piper or King Edward. 100g goose or duck fat (or olive oil)

Why can't i get my roast potatoes crispy? ›

Preheat the fat. While the potatoes parboil, add the oil or butter to the roasting pan, transfer it to the warm oven, and heat it for about 5 minutes before adding the potatoes. This allows the outside of the potatoes to crisp up nicely and not just absorb the cold fat when you put them in the oven.

How does Gordon Ramsay make potatoes? ›

Carefully add the potatoes to the hot tray along with the garlic and rosemary. Toss to coat in the fat and spread out in a single layer so they cook evenly. Roast for 40-45 minutes, turning every 15 minutes, until crisp and golden brown. Season with sea salt and freshly ground black pepper to serve.
